Our specialty coffee is always freshly roasted and we don’t hold large stocks of roasted coffee on hand. We only hold enough coffee to allow us to turn our customers’ orders around quickly. We are getting pretty good at anticipating the week’s demand and we try to stay a few days ahead of the orders so that we can get the coffee on its way quickly. Short order roasting is the only way to ensure it’s fresh and at its very best when it reaches you.
Every bean is roasted by hand in small batches. We have two small gas-fired roasters, small in capacity but extremely versatile and specifically designed for speciality roasts. For every blend, we set to work, roasting the constituent beans individually and blending them afterwards. Most coffee roasters blend the beans first and then roast all the different varieties together. This is quicker and easier but it’s not the Dreambeans way. We roast each individual variety to perfection first and then blend the perfectly roasted beans together.

The first roast of the day is whichever bean is most in demand that day. Several coffee blends may have beans in common so the largest roast is done first, early in the morning. This roast will be set aside to cool as more origins are roasted. Throughout the morning, our two hand roasting machines are kept busy, roasting in small batches and setting beans aside to cool. In the afternoon, each order is blended using the precise recipe of beans for that blend. Sometimes, all the constituents for a particular blend won’t be roasted at the same time. This can mean that it will take another few days for every constituent to be ready and for your order to go out. This is unavoidable, given the nature of hand roasting in small batches and blending different beans.
Towards the end of the day, each blend is bagged, labeled and made ready for the couriers who pick it up every evening. You’ll receive a notification by email when your order is on its way. Then all you have to do is wait a little longer. If you’re a repeat customer, you’ll know already that it’s worth waiting for.
